Preparation
- Wearing gloves, cut the jalapeno peppers in half lengthwise and trim off the stem. Leave seeds for spiciness or remove for a milder flavor.
Blending
- Add the seeded jalapenos and white vinegar to a high-powered blender. Blend until smooth.
Cooking
- In a medium pot over high heat, pour in the jalapeno/vinegar blend along with the liquid pectin. Bring to a rolling boil, stirring continuously for about 5 minutes.
- Once boiling, add in the sugar and green food coloring if desired. Boil and stir vigorously for an additional 5 minutes.
Jarring
- Carefully remove the pot from heat and spoon the jelly into sterilized jars. Allow to cool at room temperature before refrigerating. Let set for 4-5 hours.
Storage
- This jalapeno jelly will keep well in the freezer for up to six months. Defrost on the counter when ready to enjoy.
Notes
Choose a mix of red and green jalapenos for flavor variety. Control heat by adjusting seeds or mixing with milder peppers. Consider adding herbs for depth.
