Ingredients

Main Ingredients
  • 2 tsp olive oil
  • 3 oz pancetta (cut into a 1/4-inch dice)
  • 2 large egg yolks
  • 1/2 cup parmesan cheese, plus more for garnish Use freshly grated for better flavor.
  • 1/4 tsp kosher salt
  • 1 1/2 cups water Add more if needed.
  • 2 packages ramen noodles, seasoning pack left out

Method

Cooking Pancetta
  1. Heat a medium sauté pan over medium heat. Add olive oil and diced pancetta. Cook until the fat renders and the pancetta becomes crispy.
  2. Remove pancetta with a slotted spoon and drain on paper towels. Set aside.
Making the Sauce
  1. In a small bowl, whisk egg yolks and grated parmesan cheese. Add kosher salt and a sprinkle of black pepper.
Cooking Noodles
  1. In the same pan, add 1.5 cups of water and the ramen noodles. Bring to a boil, flipping noodles occasionally until they soften.
  2. Once tender, reserve some excess water and turn off heat.
Combining Ingredients
  1. Gradually whisk in 1/2 cup of reserved, hot water into the egg mixture.
  2. Toss the cooked noodles while slowly pouring in the egg mixture, keeping heat on low.
  3. Continue tossing until the cheese melts and sauce thickens.
  4. Fold crispy pancetta back into the dish and season with additional salt and pepper to taste.
  5. Serve immediately, garnishing with more parmesan cheese.

Notes

To elevate flavors, use freshly grated parmesan or add red pepper flakes. Avoid overcooking the eggs for a silky texture.
