Ingredients

For the Vegan Caramel Sauce
  • 10 pieces pitted dates Naturally sweet and gooey fruits that add a rich, caramel-like flavor.
  • 3/4 cups warm water Helps to blend the dates into a smooth consistency.
  • 1/2 cup maple syrup (grade B) Adds depth of sweetness while enhancing the caramel flavor.
  • 1 tablespoon virgin coconut oil Contributes creaminess and a subtle coconut essence.
  • 1 1/2 teaspoons vanilla For an aromatic flavor that elevates the caramel.
  • 1/4 teaspoon fine sea salt Enhances sweetness and balances flavors.
For the Apple Nachos
  • 2-3 medium crisp apples (Cripps Pink also known as Pink Lady) Provides a refreshing crunch and sweet-tart flavor.
  • 1 medium lemon Prevents browning of apple slices and enhances taste.
  • 2/3 cups vegan chips or dark chocolate chips Creates a rich, chocolatey drizzle.
  • 1/2 cup chopped walnuts or nut of choice Adds crunch and nuttiness.
  • 1/3 to 1/2 cup dried coconut flakes Provides chewy texture and tropical flavor.

Method

Prepare the Caramel
  1. Place the pitted dates in a blender, pour in warm water, and blend until smooth and creamy. Adjust with more water if necessary.
Cook the Sauce
  1. Transfer the date mixture to a small saucepan and add maple syrup, coconut oil, vanilla, and sea salt. Whisk together and continue whisking over medium-low heat for 5 to 7 minutes until smooth.
  2. Remove from heat and cool in a glass container; the sauce will thicken as it cools.
Slice the Apples
  1. Core and slice the apples thinly, arranging them on a large platter. Squeeze fresh lemon juice over them immediately.
Melt the Chocolate
  1. Melt the chocolate chips in another small saucepan over medium-low heat, stirring until smooth.
Prepare the Sauces for Drizzling
  1. Place the melted chocolate in one resealable plastic bag and the cooled vegan caramel in another. Seal tightly and cut a small tip from one corner of each bag.
Assemble and Serve
  1. Arrange the apple slices on the platter, drizzle with vegan caramel and melted chocolate, then sprinkle with chopped walnuts and coconut flakes.
Enjoy
  1. Serve immediately and indulge in the delightful combination of textures and flavors.

Notes

You can mix different types of apples, add toppings like dried cranberries for color, or a sprinkle of cinnamon for warmth. Store leftover caramel in the fridge for up to a week.
