Dry Ingredients
  • 1 cup whole wheat pastry flour Provides a nutty flavor
  • 1 cup old-fashioned rolled oats Adds a chewy texture
  • 1.5 tsp baking powder Key leavening agent
  • 0.5 tsp baking soda Works with baking powder for fluffiness
  • 1 tsp ground cinnamon Infuses warmth and nostalgia
  • Pinch salt Enhances flavors
Wet Ingredients
  • 1 large egg Binding agent
  • 1 cup plain Greek yogurt Adds moisture and protein
  • 0.5 cup unsweetened applesauce Provides natural sweetness
  • 0.25 cup brown sugar Adds a rich molasses flavor
  • 1 tsp vanilla extract Adds sweetness and depth
  • 1 medium apple (peeled, cored, and grated) Star ingredient for flavor
  • 0.5 cup raisins Adds natural sweetness

Method

Preparation
  1. Preheat your oven to 350°F (176°C). Prepare a muffin pan by spraying the cavities with cooking spray or lining them with paper liners.
  2. In a large mixing bowl, combine the flour, oats, baking powder, baking soda, cinnamon, and salt. Stir until fully incorporated.
  3. In a separate bowl, lightly beat the egg. Whisk in the Greek yogurt, applesauce, brown sugar, vanilla extract, and grated apple until creamy.
Mixing
  1. Add the wet ingredients to the dry ingredients, mixing gently until just combined, being careful not to overmix. Fold in the raisins.
Baking
  1. Divide the batter evenly among 12 muffin cups, filling each almost to the top. Optionally, sprinkle a few oats over the muffin tops.
  2. Bake the muffins for 20-22 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

Notes

For added sweetness, consider adding chopped nuts or substituting the apple with other fruits. Make them dairy-free with a plant-based yogurt alternative.
