Ingredients

For the skewers
  • 4 pieces boneless skinless chicken thighs Cut into thirds for skewering
  • 1/4 cup rice vinegar Adds tangy brightness
  • 1/4 cup Gochujang paste Korean chili paste for umami and heat
  • 1/4 cup soy sauce (Tamari) Provides savory depth
Marinade additions
  • 1/4 cup chopped cilantro For a fresh, herbal note
  • 2 cloves garlic, chopped Adds an aromatic punch
  • 2 tablespoons honey Sweetens the marinade
  • 1 teaspoon ground ginger powder Balances spice
  • 1/2 teaspoon crushed red pepper flakes For heat
  • 1/2 teaspoon ground coriander Adds flavor
  • 1 teaspoon sesame seeds For garnish and crunch

Method

Preparation
  1. Cut the chicken thighs into thirds for quick cooking and easy handling.
  2. Slide the pieces onto skewers, ensuring they are secure for grilling.
Cooking
  1. Heat your grill to high.
  2. Place the chicken skewers on the grill, cooking for about 3 minutes on each side until golden-brown.
  3. While the chicken cooks, prepare the marinade by whisking together all remaining ingredients (except the sesame seeds) until combined.
  4. After grilling, brush the marinade evenly over the chicken and lower the grill heat to medium-high.
  5. Return the chicken to the grill for another 3 minutes on each side, or until fully cooked through.
  6. Remove the chicken skewers from the grill and place them on a serving plate.
  7. Garnish with sesame seeds right before serving.

Notes

For deeper flavors, consider marinating the chicken thighs for several hours or overnight. You can also alternate chicken with colorful vegetables on the skewers. Experiment with different herbs for a fresh twist.
