Ingredients

Main Ingredients
  • 1 bunch green asparagus Fresh and vibrant for added nutrition and crunch.
  • 300 to 500 grams new potatoes Creamy on the inside, crispy on the outside.
  • 3 tablespoons balsamic vinegar Adds a rich, tangy-sweet flavor.
  • to taste ml olive oil Enhances flavors and promotes a roasted exterior.

Method

Preparation
  1. Preheat the oven to 200°C (about 400°F).
  2. Prepare the new potatoes by cutting them into halves or quarters, depending on their size. Place them in a baking dish and drizzle with olive oil, sprinkling with salt. Toss to coat evenly.
  3. Roast the potatoes in the preheated oven for about 20 minutes.
  4. Trim the green asparagus by snapping off the tough ends. After the potatoes have roasted for 20 minutes, add the asparagus to the baking dish.
  5. Drizzle with more olive oil, add the balsamic vinegar, and zest a lemon over the top.
  6. Return to the oven and roast for an additional 15 minutes.
  7. Serve warm and enjoy the vibrant colors and aroma.

Notes

Choose fresh vegetables for best flavor. Consider adding minced garlic during the last 10 minutes of roasting for an aromatic twist. Adjust vinegar to taste for stronger flavor.
