Ingredients

Pasta and Chicken
  • 1/2 lb pasta (I used rotini) Choose a pasta that holds sauce well—rotini, with its spirals, is perfect for this dish.
  • 2 large boneless, skinless chicken breasts Juicy and tender, these chicken breasts form the protein-filled base of the dish.
  • 1 tsp olive oil Provides a smooth texture and a subtle fruity flavor.
  • Salt and pepper to taste Salt and pepper Enhances the flavors of your chicken and pasta.
Sauce Ingredients
  • 5 Tbsp butter Adds richness and a smooth texture to the sauce.
  • 5 Tbsp all-purpose flour Thickens your pasta sauce to a creamy consistency.
  • 3 cloves garlic, minced Aromatic and flavorful, garlic gives depth to the dish.
  • 3 cups milk Creates a creamy base for the sauce, making it luscious and comforting.
  • 3/4 cup cheddar cheese, shredded Provides a melty, rich flavor.
  • 3/4 cup Parmesan cheese, grated Adds a sharp, salty kick to balance the dish.

Method

Preparation
  1. Preheat the oven to 400˚F and lightly grease a 9x13 baking dish to prevent sticking.
  2. In a medium saucepan, bring water to a boil and add the rotini pasta. Cook until al dente according to package instructions. Drain and set aside.
  3. While the pasta cooks, heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper. Cook until the insides are no longer pink, about 6-8 minutes on each side. Once done, remove the chicken from the skillet and slice into small pieces.
  4. In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and minced garlic, mixing together for about 1 minute to release the garlic’s aroma.
  5. Gradually whisk in the milk, bringing the mix to a simmer. Keep whisking constantly until the sauce thickens, about 5-7 minutes.
  6. Remove the pot from heat and stir in the cheddar and Parmesan cheese until melted and creamy.
  7. In the prepared baking dish, combine the cooked pasta and sliced chicken. Pour the cheese sauce over the top, making sure everything is well coated. Season with additional salt and pepper to taste.
  8. Place the dish in the preheated oven and bake for 25 minutes, or until the top is golden and bubbly. Allow it to stand for a couple of minutes before serving.

Notes

For added flavor, marinate the chicken in your favorite spices before cooking. Feel free to mix and match cheeses; mozzarella or goat cheese can offer a delightful twist. If you prefer a whole grain or gluten-free option, substitute the rotini for your choice of alternative pasta. Add some steamed broccoli or spinach for a pop of color and extra nutrients.
