Ingredients

Main Ingredients
  • 2 pounds boneless chicken breasts Tender and juicy, these chicken breasts provide a hearty base for our dish.
  • 16 ounces ricotta cheese Creamy and velvety, ricotta adds a rich texture that enhances the overall flavor.
  • 1 cup spinach (chopped) Brings a touch of freshness to the dish.
  • 1 cup mozzarella cheese (shredded) Divided use; melts beautifully over the chicken.
  • ½ cup parmesan cheese (grated) Divided use; adds depth and a rich finish.
  • 2 cups marinara sauce A zingy spicy arrabiata sauce offers a wonderful contrast to the creamy cheeses.
  • 4 cloves garlic (minced) Divided use; infuses the dish with flavor.
  • 1 teaspoon Italian seasoning A blend of herbs that brings warmth and familiarity.
  • Salt and pepper to taste Essential seasoning to elevate all the flavors.

Method

Preparation
  1. Preheat your oven to 400°F (about 200°C).
  2. In a medium bowl, combine the shredded mozzarella and grated parmesan. Set aside half for later.
  3. In a separate bowl, combine the ricotta cheese, half of the cheese mixture, chopped spinach, half of the minced garlic, and Italian seasoning. Mix thoroughly until all ingredients are well integrated.
  4. Lightly oil a 13×9-inch baking dish with olive oil or use a non-stick cooking spray to prevent sticking.
  5. Place the boneless chicken breasts in a single layer within the greased pan, ensuring they are evenly spaced.
  6. Sprinkle salt, pepper, and the remaining minced garlic over the tops of the chicken breasts.
  7. Evenly spread the ricotta and spinach mixture atop the chicken breasts.
  8. Pour the marinara sauce over the ricotta-covered chicken.
  9. Place the dish in the preheated oven and bake for approximately 20 minutes.
  10. Once baked, remove the dish from the oven and sprinkle the reserved cheese mixture evenly on top.
  11. Return it to the oven until the cheese is fully melted and bubbly.
  12. Allow the chicken to rest for about 5 to 10 minutes before serving.

Notes

Using a meat thermometer can ensure your chicken is cooked perfectly every time. You can prepare the ricotta and spinach mixture a day in advance. Feel free to add chopped red pepper flakes to the marinara sauce for an extra kick.
