Method

Preparation of Filling
  1. Start by draining and rinsing the black beans thoroughly.
  2. Dice the onion and jalapeño pepper.
  3. Heat a medium-sized pan over medium-high heat and add about 2 tablespoons of vegetable broth.
  4. Once hot, toss in the diced onion and jalapeño. Sauté for about 5 minutes, until the onion is translucent.
  5. Add the rinsed black beans to the pan along with the remaining vegetable broth.
  6. Cook the mixture for 5 minutes until the beans are hot and soft. Mash the beans slightly with the back of your spatula.
  7. Mix in the cumin, garlic powder, salt, and pepper. Set the filling aside.
Tortilla Preparation
  1. Preheat a large griddle over medium-high heat.
  2. Place the tortillas on the griddle and warm them for about 30 seconds on each side.
  3. Set the warm tortillas aside on a cutting board.
Filling and Rolling
  1. Fill each tortilla with heaping tablespoons of the black bean mixture and roll it up tightly.
  2. Secure the ends with a toothpick or place them opening side down on the cutting board.
  3. Repeat this step until all the tortillas are filled and rolled.
Cooking
  1. For extra crispiness, heat some oil in a pan over medium-high heat and fry the flautas.
  2. Alternatively, for a healthier option, bake them on a preheated baking sheet.

Notes

Use fresh herbs for added flavor, consider spicing it up with more jalapeño, or opt for baked flautas for a healthier option. Experiment with different beans, spices, or toppings.
