Method

Fermented Overnight Sponge
  1. Combine the active sourdough starter, bread flour, warmed milk, melted butter, egg, sugar, and salt in a stand mixer. Mix on medium speed for about 5 minutes.
  2. Transfer the dough to a greased bowl, cover and let it ferment at room temperature for 8-12 hours, until doubled in size.
Prepare for the Second Proof
  1. Remove the dough from the bowl and roll it out into a rectangle approximately 15 inches by 12 inches.
Create the Filling
  1. Mix together the brown sugar, cinnamon, nutmeg, and cardamom in a small bowl.
Assemble the Wreath
  1. Spread the softened butter over the rolled-out dough.
  2. Sprinkle the spiced brown sugar filling over the buttered surface.
  3. Roll the dough tightly from the long side, pinching the ends at the seam.
Braid the Dough
  1. Cut the rolled dough about 1.5 inches from one end, ensuring a portion remains uncut.
  2. Braid the three strands loosely and shape into a circle in a greased skillet or dish.
Proof the Wreath
  1. Proof the braided wreath in a warm oven (turned off) for 1.5 to 2 hours.
Bake the Wreath
  1. Preheat the oven to 375°F (190°C). Bake the wreath for about 22-25 minutes, until golden brown.
Make the Frosting
  1. Mix powdered sugar, heavy cream or milk, and vanilla in a separate bowl until combined.
Frost and Serve
  1. Once the wreath has baked and cooled for about 10 minutes, drizzle or spread the frosting over the top.

Notes

For an extra touch, add chopped nuts to the cinnamon filling or experiment with sweeteners like maple syrup or honey. The braiding technique doesn't have to be perfect — a rustic look adds charm!
