Method

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. Cut the chicken thighs into about six smaller pieces and season with 1 tablespoon of olive oil, turmeric, cumin, salt, and black pepper.
  3. Line a baking sheet with aluminum foil, placing the seasoned chicken on one side and the onion wedges on the other, drizzling the onion with the remaining 1/2 tablespoon of olive oil.
Cooking
  1. Roast the chicken and onions for about 25 minutes until the chicken is golden brown and fully cooked, and the onions are softened.
  2. Prepare the dressing by blending Greek yogurt, tahini, garlic, lemon juice, and a pinch of salt and pepper, adding water gradually until desired consistency is achieved.
  3. Cook the cauliflower rice as per package instructions, usually by sautéing briefly in a pan with a splash of water.
Assembly
  1. Divide the cauliflower rice among four bowls and top with roasted chicken, red onions, cucumber, cherry tomatoes, kalamata olives, and drizzle with the dressing.
