  • 1 cup chicken or vegetable broth Adds depth and richness for a creamy purée.
  • 3 tablespoons unsalted butter Cut into chunks for velvety richness.
  • 2 tablespoons vegetable oil Used for roasting.
  • 1 teaspoon chopped fresh thyme Adds earthy and fragrant notes.
  • Salt to taste salt Essential for enhancing natural flavors.
  • Freshly ground to taste black pepper Provides subtle heat.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Carefully cut two 1-inch (2.5-cm) thick slices from the center of the cauliflower head to create steaks. Chop any remaining florets into ½-inch (13-mm) pieces.
Cooking
  1. In a medium pot, bring the broth and ½ teaspoon salt to a boil. Add chopped cauliflower florets and steam for about 15 minutes or until very tender.
  2. Transfer the steamed cauliflower florets to a food processor. Add ½ cup of broth, butter chunks, and process until smooth. Season with salt and pepper to taste, then fold in chopped thyme.
  3. Heat 1½ tablespoons of vegetable oil in a skillet over medium-high heat. Sear the cauliflower steaks, presentation side down, for about 4 to 5 minutes until golden.
  4. Flip the steaks and transfer the skillet to the oven. Bake for about 10 minutes until tender.
Serving
  1. Rewarm the cauliflower purée. Plate by dividing the purée between two plates, placing a cauliflower steak on top of each with the presentation side facing up.

Notes

For added flavor, incorporate spices into the oil before searing the steaks. To enhance the purée's creaminess, add a splash of cream or Greek yogurt during blending.
