Method
Marinate the Chicken
- Combine all the ingredients for the chicken marinade in a bowl. Stir until well blended. Add cubed chicken and coat with marinade. Cover and let marinate for at least 30 minutes.
Prepare the Tzatziki Sauce
- In a separate bowl, combine Greek yogurt, fresh lemon juice, chopped dill, grated garlic, and season with salt and pepper. Stir until well mixed and refrigerate.
Cook the Chicken
- Heat a large skillet over medium-high heat. Add enough olive oil to coat the bottom. Once hot, add the marinated chicken in a single layer. Brown for 3-4 minutes, flip, and continue cooking for another 4-5 minutes until cooked through.
Assemble the Bowls
- Start with a scoop of brown rice in each bowl. Top with cooked chicken, cucumbers, red onion, cherry tomatoes, olives, and feta cheese. Add tzatziki sauce on top.
Notes
Don’t rush the marination process; overnight marinating enhances flavor. Experiment with herbs in tzatziki, grill chicken for a smoky flavor, and cook rice in broth for added taste.
