Ingredients

Main Ingredients
  • 2 lbs boneless and skinless chicken breasts (thighs or legs) Tender and juicy, perfect for grilling.
  • 1 piece cucumber (cut into small pieces) Refreshingly crisp, adding a cooling element.
  • 1 small onion (quartered) Sweet and aromatic, enhancing the dish’s depth.
  • Oil for basting A light touch for that perfect grilled finish.
Marinade Ingredients
  • 3 tablespoons cooking oil Helps achieve a golden char on the skewers.
  • 2 stalks lemongrass (white parts only) Offers a fragrant, citrusy backbone to the marinade.
  • 2 cloves garlic (peeled) Adds rich, robust flavor that melds beautifully.
  • 6 small shallots (or pearl onions, peeled) A sweeter alternative that enhances the marinade.
  • 2 teaspoons turmeric powder Gives a vibrant yellow hue and earthy flavor.
  • 1 teaspoon coriander powder Adds a subtle, zesty warmth to the mix.
  • 1 teaspoon chili powder Provides a hint of spice without overwhelming the palate.
  • 1/2 tablespoon salt (or more to taste) Essential for bringing out all the flavors.
  • 2 tablespoons sugar (or honey) Balances the savory elements with a touch of sweetness.

Method

Preparation
  1. Begin by cutting the chicken meat into small cubes and set them aside.
  2. In a food processor, blend together the lemongrass, garlic, shallots, turmeric, coriander, chili powder, salt, and sugar. Add a little water if necessary to achieve a smooth consistency.
  3. Combine the chicken cubes with the marinade in a mixing bowl, stirring well to ensure all pieces are coated. For the best flavor, marinate in the refrigerator for at least 6 hours or overnight.
  4. Once marinated, take bamboo skewers and thread 3-4 pieces of chicken onto each one.
Cooking
  1. Preheat your grill and cook the skewers for about 2-3 minutes on each side, or until the chicken is fully cooked with a charred surface. Remember to baste with oil while grilling.
Serving
  1. Serve your Chicken Satay hot, alongside fresh cucumber slices and onion quarters, plus a drizzle of peanut sauce for dipping.

Notes

For the best flavor, marinate the chicken overnight. If you don’t have a grill, alternative methods include using a grill pan or baking in the oven.
