Ingredients

Main Ingredients
  • 2 lbs 2 – 2.5 lbs deboned skin on chicken thighs Tender, juicy, and full of flavor.
  • 0.5 cup fresh lime juice Adds a bright and tangy kick.
  • 1 teaspoon fresh lime zest Enhances the citrus aroma for an extra zing.
  • 0.25 cup olive oil For richness and moisture.
  • 3 tablespoons fresh cilantro leaves (roughly chopped) Aromatic and fresh for that herbal touch.
  • 1 jalapeño (chopped finely) Adds a nice spicy kick.
  • 2 teaspoons chipotle chili powder Smoky and spicy; adjust according to your taste.
  • 5 cloves garlic (minced) Fragrant and flavor-packed.
  • 1.5 tablespoons honey A touch of sweetness to balance flavors.
  • 2 teaspoons salt Essential for enhancing all flavors.
  • lime wedges (for serving) Fresh and zesty, perfect for a squeeze on top.

Method

Preparation
  1. Leave the skin on the chicken thighs but remove the bones. Cut two slits along each side of the bone, rinse the chicken under cold water, and pat it dry with paper towels. Set the chicken aside for marinating.
  2. In a large bowl, whisk together the fresh lime juice, lime zest, olive oil, cilantro, jalapeño, chipotle chili powder, minced garlic, honey, and salt until well combined. Reserve some of the marinade for basting later.
  3. Add the deboned chicken thighs to the marinade, ensuring they are well coated. For best results, allow the chicken to marinate for at least 2 hours, or overnight if possible.
Cooking
  1. Preheat the grill to medium-high temperature. Brush the grill grates with a little olive oil to prevent sticking.
  2. Remove the chicken from the marinade and let any excess marinade drip off. Place the chicken on the grill and baste it with the reserved marinade, adding some garlic, cilantro, and jalapeño on top.
  3. Grill the chicken for about 6-8 minutes on each side or until it has beautiful grill marks and is cooked through, achieving a golden brown and slightly charred appearance.
  4. Once grilled, remove the chicken from the grill, and allow it to rest for a few minutes.
  5. Serve immediately with fresh lime wedges for an extra burst of zest on top.

Notes

Allowing the chicken to marinate overnight significantly boosts flavor. If you prefer less heat, tone down the jalapeño and chipotle chili powder. Ensure the grill is fully preheated for more pronounced grill marks and flavor.
