Method

Preparation
  1. Wash sushi rice until the water runs clear. Cook the rice following package instructions. Mix rice vinegar with sugar and fold into the rice. Allow to cool.
  2. Preheat oven to 450°F (235°C). Bake shrimp tempura for 10-15 minutes until crispy. Set aside.
  3. Heat olive oil in a skillet over medium heat. Add panko breadcrumbs, stirring constantly for 2-3 minutes until golden brown. Let cool.
Assembly
  1. Cover the bamboo sushi mat with plastic wrap. Place a nori sheet on the mat, shiny side down.
  2. Wet hands and take about 3/4 cup of sushi rice. Spread evenly over nori, leaving a border at the top.
  3. Flip nori so rice is facing down. Add 2 pieces of shrimp tempura and 2 slices of avocado down the center.
  4. Tightly roll the sushi away from you, using the mat to shape it. Remove plastic wrap while rolling. Repeat with remaining ingredients.
  5. Roll each sushi roll in the toasted panko breadcrumbs for a crunchy coating.
  6. Slice sushi into bite-sized pieces using a sharp knife moistened with water. Serve immediately.

Notes

Keep a bowl of water handy to moisten hands while working with rice. Experiment with fillings for variety. Store leftovers in an airtight container in the fridge for up to a day.
