Method

Preparation
  1. Preheat your oven to 325°F (165°C) and position an oven rack in the middle.
  2. Grease a 9-inch deep dish pie plate with butter.
  3. In a large sauté pan, melt the butter over medium-low heat. Add the chopped shallots and cook until they are soft and translucent, about 4 minutes.

  5. In a large bowl, whisk together eggs, heavy cream, remaining ¾ teaspoon of salt, ground nutmeg, and cayenne pepper.
Assembly
  1. Spread the sautéed broccoli and shallots evenly over the bottom of the greased pie plate.
  2. Sprinkle shredded Gruyère cheese over the vegetables.
  3. Pour the egg mixture over the cheese.
Baking
  1. Place the assembled quiche in the preheated oven and bake for about an hour, or until the custard is set and the top is golden brown.
  2. Let the quiche cool for about 10 minutes before slicing it into wedges.

Notes

For added flavor, consider including cooked bacon, diced ham, or cooked spinach. For a lighter version, use half-and-half instead of heavy cream. Experiment with different cheeses like cheddar or feta.
