Method
Preparation of Tartar Sauce
- In a mixing bowl, combine the mayonnaise, minced onion, chopped dill pickles, chopped hard-boiled egg, lemon juice, and chopped parsley. Mix well until all ingredients are combined. Season with salt and pepper to taste. Set aside.
Dredging Station Setup
- Spread the flour in a shallow dish. In a second shallow dish, beat the eggs until well combined. In a third shallow dish, spread out the Panko breadcrumbs.
Coat the Oysters
- Pat the oysters dry using paper towels, then sprinkle lightly with salt and pepper. Dredge each oyster in the flour, shaking off excess, then dip into the egg mixture, and finally coat with Panko breadcrumbs.
Frying Time
- Heat vegetable oil in a 12-inch non-stick skillet over medium heat. Fry the oysters in batches until deep golden brown and crispy, about 3-4 minutes per side.
- Transfer the fried oysters to a paper towel-lined plate to drain excess oil.
Serve
- Serve the Deep Fried Oysters immediately with the tartar sauce and a side of creamy coleslaw.
Notes
Use fresh oysters whenever possible. Maintain oil temperature between 350°F to 375°F for optimal frying conditions.
