Preparation
- Preheat the oven to 220°C (425°F) and place the cast iron Dutch oven inside to heat up for 10 minutes.
- Pat the whole chicken dry with paper towels and remove any giblets. Season generously with salt and black pepper.
- In a small bowl, combine softened butter with dried tarragon, parsley, thyme, coriander, rosemary, and red pepper flakes. Mix until well combined.
- Carefully separate the skin from the chicken breast and stuff half of the herb butter under each side. Rub remaining butter over the chicken.
- Stuff two lemon quarters into the chicken’s cavity for added moisture and flavor.
- Tuck the chicken's wing tips under its body and tie the legs together with kitchen twine.
- Arrange chopped carrots, baby potatoes, onion, and smashed garlic in the bottom of the Dutch oven. Squeeze the remaining lemon quarters over the vegetables.
- Position the seasoned chicken over the vegetables and pour low sodium chicken stock into the bottom.
Cooking
- Cover the Dutch oven with its lid and roast at 220°C (425°F) for 20-30 minutes.
- Reduce the heat to 180°C (365°F) and continue roasting for an additional 40-50 minutes, until the internal temperature reaches 74°C (165°F).
Serving
- Let the chicken rest for about 10-15 minutes before carving to allow juices to redistribute.
Notes
Feel free to customize vegetables or save the drippings to make gravy. Experiment with different herbs for unique flavors.
