Method

Preparation
  1. Boil the Pasta: Bring a large pot of salted water to a boil. Add the fusilli and cook until al dente, about 8 to 10 minutes. Drain, reserving ½ cup of the cooking liquid.
  2. Sauté the Garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 to 2 minutes until fragrant, avoiding burning.
  3. Add the Tomatoes: Toss in halved cherry tomatoes, salt, and black pepper. Cook on medium-high heat, stirring occasionally for 4 to 5 minutes until tomatoes soften and burst. Smash them into a chunky sauce.
  4. Combine with Pasta: Add the drained fusilli to the pan and toss to coat in the tomato sauce.
  5. Finish with Basil and Mozzarella: Fold in fresh basil and mozzarella just before serving to maintain the texture.
  6. Adjust and Serve: Taste and adjust seasoning. If dry, add reserved pasta water to reach desired consistency. Serve immediately.

Notes

For the best flavor, choose ripe cherry tomatoes. Fresh ingredients enhance the dish's authenticity. Experiment with herbs for varied flavor.
