  • 1/4 tsp salt Brings out the depth of all the flavors.
  • to taste black pepper Adds a bit of heat and complexity.
For the Corn
  • 4-6 ears corn on the cob The star of the dish, sweet and tender for optimal sweetness.
  • 1/2 cup finely grated Parmesan cheese Rich and nutty, coats the corn beautifully.
  • 1/4 tsp ancho chili powder Adds warm earthy tones.
  • for serving lime wedges A refreshing accompaniment.

Method

Preparation
  1. Place the chipotle in adobo sauce, mayonnaise, sour cream, lime juice, oregano, salt, and black pepper in a small food processor. Blend until smooth and well combined.
Grilling the Corn
  1. Preheat the grill on high heat. Grill the corn for about 8 minutes, rotating occasionally, until charred all over and cooked through. Alternatively, boil the corn for 10 minutes, then drain and char in a skillet.
Coating the Corn
  1. Allow the corn to cool slightly. On a shallow plate, place the grated Parmesan cheese.
  2. Using a pastry brush, generously slather each ear of corn with the prepared Chipotle Adobo Mayo. Roll in the Parmesan cheese until evenly coated.
Serving
  1. Sprinkle a pinch of ancho chili powder over each ear of corn and serve with lime wedges on the side.

Notes

Fresh corn is preferred for optimal sweetness. Adjust the spiciness based on your preference. Allow coated corn to rest for a few minutes before serving.
