Ingredients

Main Ingredients
  • 6 pieces Peaches (Mostly Ripe) Choose peaches that are firm yet slightly yielding to the touch.
  • 3 Tbsp Olive Oil (or Melted Butter) Adds a rich, savory note to complement the sweet fruit.
  • 1 Tsp Brown Sugar Each peach half will use this amount for caramelization.
  • 1.5 cups Mascarpone Cheese Creamy and rich, serves as an exquisite topping base.
  • 2 Tsp Vanilla Extract Enhances the honey mascarpone flavor.
  • 4 Tbsp Honey Adds natural sweetness; you can add more for topping.
  • Fresh Thyme (Optional) Offers an aromatic contrast that elevates the dish.

Method

Preparation
  1. Wash your peaches thoroughly. Slice each peach lengthwise to remove the pit.
  2. Brush each peach half with olive oil (or melted butter) and sprinkle with brown sugar.
Grilling
  1. Heat a grill pan, outdoor grill, or skillet over medium heat. Place the peaches cut side up on the grill.
  2. Cook until the peaches are soft and slightly charred, about 4-5 minutes.
Prepare Honey Mascarpone
  1. In a mixing bowl, combine the mascarpone cheese, vanilla extract, and honey. Whisk until light and well combined.
Serve
  1. Remove the peaches from the grill. Serve each warm peach half with a spoonful of honey mascarpone on top. Drizzle with additional honey if desired.
  2. Garnish with fresh thyme for a beautiful presentation.

Notes

Select firm peaches for best results; overripe peaches may fall apart on the grill. Experimenting with different herbs like mint can provide a refreshing twist.
