  • 1/3 cup honey Adds sweetness and a glossy finish
  • 2 tbsp Dijon mustard Enhances the marinade flavor
  • 4 tbsp soy sauce Adds umami richness
  • 2 cloves garlic (crushed) Infuses flavor into the marinade
  • 2 - 3 tbsp sriracha or any other hot sauce Adjust spice level to taste
  • 1/4 tsp salt Enhances all flavors
  • 1.5 tbsp oil (preferably vegetable) Used for cooking

Method

Preparation
  1. Cut the chicken thigh fillets into 2cm (about 0.8 inches) cubes.
  2. In a bowl, combine honey, Dijon mustard, soy sauce, crushed garlic, sriracha, and salt. Mix until smooth.
  3. Transfer 4 tablespoons of the marinade into a small bowl for later use.
  4. Add the chicken cubes to the remaining marinade and mix well. Set aside to marinate for at least 20 minutes.
Cooking
  1. Thread the marinated chicken pieces onto skewers.
  2. Heat oil in a BBQ grill or skillet over medium heat. Cook the skewers for approximately 2.5 minutes on each side.
  3. Baste the cooked side with the reserved marinade, then flip and quickly baste the other side.
  4. Baste again on the plate with reserved marinade before serving.

Notes

For optimal flavor, marinate the chicken overnight. Ensure your grill or skillet is well-heated to prevent sticking. Adjust sriracha levels to find the desired heat.
