Ingredients

For the Salmon
  • 4 5-ounce skinless salmon filets (diced into 1-inch chunks) Rich in omega-3 fatty acids
  • 1 tablespoon minced ginger Adds a warm, aromatic spice
  • 2 teaspoons soy sauce For marinating
  • 1 tablespoon gochujang Korean chili paste for spice
  • 2 teaspoons mirin Adds a hint of sweetness
  • 2 teaspoons soy sauce (plus more for serving) Adjust based on preference
  • 2 teaspoons sugar Helps round out flavors
  • 1/2 teaspoon toasted sesame oil Adds nutty depth
  • 1 small clove garlic (minced) Provides a fragrant backbone
For Serving
  • 3 cups cooked rice Serves as a base for the salmon
  • 4 mini cucumbers (sliced) Adds crunch
  • Scallions (sliced thin on an angle) Fresh garnish
  • Black sesame seeds For visual contrast and crunch

Method

Preparation
  1. In a small bowl, combine the minced ginger, soy sauce, gochujang, mirin, sugar, toasted sesame oil, and minced garlic to make a glaze.
  2. Place the diced salmon in a large mixing bowl and pour in the ginger-soy mixture. Allow it to marinate for about 5 minutes.
  3. Spray the air fryer basket lightly with olive oil.
Cooking
  1. Arrange the marinated salmon in an even layer in the air fryer basket. Cook at 400°F for 5 minutes, shaking the basket halfway through. Brush the salmon with the remaining glaze and air fry for an additional minute.
  2. Alternatively, preheat your oven to 425°F, layer the salmon on a sheet pan and bake for 8 minutes. Brush with glaze and bake an additional 2-3 minutes.
Assembly
  1. Scoop ¾ cup of cooked rice into each bowl. Top with salmon, mini cucumber slices, and garnish with black sesame seeds and scallions.
  2. Serve with additional soy sauce on the side.

Notes

For extra crunch, consider adding shredded carrots or radishes. Adjust spiciness by changing the gochujang amount. Don't skip the marination time for better flavor. If using frozen salmon, ensure it's thawed before cooking.
