Preparation
- Gather all your ingredients, chop the onion, bell peppers, and shred the cabbage.
- Boil the macaroni according to package instructions until al dente. Drain and set aside.
- In a pan, heat the olive oil, add the chopped onion and bell peppers. Cook until the onion is translucent (about 2 minutes). Stir in the shredded cabbage, salt, and crushed chili flakes.
- Add the tomato ketchup to the sautéed vegetables and mix well.
- Use a slotted spoon to add the hot, cooked macaroni into the sautéed mixture. Combine thoroughly and adjust salt and spices.
Prepare the Cups
- In a plastic bag, crush salted crackers until they resemble crumbs. Preheat your oven to 350°F (180°C).
- Mix the cracker crumbs with low-fat shredded cheese and milk in a bowl. Add milk gradually to form a dough.
- Grease a muffin pan and scoop a portion of the cracker dough into the muffin cups, pressing it to form a cup shape.
- Bake in the oven for 3-4 minutes until the edges are golden brown.
- Gently loosen the baked crackers from the sides using a fork while still in the muffin tin.
- Fill each baked cracker cup with the prepared macaroni mixture and top with additional shredded cheese.
- Return the muffin pan to the oven until the cheese melts.
- Let the cups cool for 2-3 minutes before removing them from the muffin pan.
- Serve the cups as is or with a drizzle of tomato ketchup.
Notes
For a creamier macaroni salad, consider adding a dollop of low-fat yogurt. You can modify with other vegetables like carrots or peas.
