  • 2.5 tablespoons oil Light oil, such as vegetable or canola, for stir-frying.
  • 1/2 onion (quartered) Adds depth to the dish.
  • 1/2 red bell pepper (cut into chunks) Sweet and slightly smoky.
  • 1/2 green bell pepper (slivered into 1-inch lengths) Adds crunch and a touch of bitterness.
  • 1/2 medium-ripe mango (peeled, pitted and cut into cubes) Juicy, fragrant, and tropical.
  • 2.5 tablespoons ketchup Provides a sweet and tangy base for the sauce.
  • 2 tablespoons chili sauce (Lingham or Maggi) Adds a kick of heat.
  • 1 tablespoon oyster sauce Rich and savory.
  • 1 teaspoon honey Enhances sweetness.
  • 3 tablespoons mango juice (or water) Adds moisture.
  • 1/2 teaspoon apple cider vinegar Balances the dish.
  • 1/2 teaspoon sugar (or to taste) Adjust sweetness to your preference.
  • Salt (to taste) Elevates all flavors.

Method

Preparation
  1. Marinate the chicken pieces with cornstarch and set aside for approximately 10-15 minutes.
  2. In a separate bowl, mix together ketchup, chili sauce, oyster sauce, honey, mango juice, apple cider vinegar, and sugar. Adjust the sugar and salt to taste.
Cooking
  1. Heat 1/2 tablespoon of oil in a skillet over medium heat. Add the quartered onion, chunks of red bell pepper, and slivers of green bell pepper. Stir-fry until slightly charred. Remove and set aside.
  2. In the same skillet, heat the remaining oil. Add marinated chicken and cook until the surface turns white and begins to brown, about 5-7 minutes.
  3. Add the mango cubes to the skillet and stir continuously for about 2-3 minutes until the flavors mingle and the mango starts to soften.
  4. Pour the prepared sauce and sautéed vegetables into the skillet. Stir well to coat all ingredients and cook for an additional 2-3 minutes.
  5. Serve the Mango Chicken immediately with steamed rice.

Notes

Use fresh, ripe mango for the best flavor. Customize spice levels to your preference, and consider topping with toasted sesame seeds or chopped cilantro for added crunch.
