Ingredients

For the Marinade
  • 2 pounds chicken thighs (boneless and skinless) Known for their rich flavor and juicy tenderness.
  • ¼ cup honey Enhances marinate and caramelizes on the grill.
  • 2 tablespoons olive oil (extra virgin) Adds heart-healthy fats.
  • 2 tablespoons Dijon mustard Provides a tangy kick.
  • 2 tablespoons soy sauce or coconut aminos Adds savory depth.
  • 1 teaspoon garlic powder Imparts a bold flavor.
  • 1 teaspoon salt Essential for enhancing flavor.
  • 1 teaspoon black pepper Adds subtle warmth.
  • ½ teaspoon paprika Contributes a mild smoky flavor.

Method

Preparation
  1. In a gallon-sized Ziploc bag, combine all the marinade ingredients: chicken thighs, honey, olive oil, Dijon mustard, soy sauce (or coconut aminos), garlic powder, salt, black pepper, and paprika.
  2. Squeeze out any excess air from the bag and zip it closed. Lay the bag flat on a surface, gently spreading the marinade around to coat the chicken evenly. Let it marinate for a minimum of 1 hour, ideally overnight.
Cooking
  1. Preheat your grill to a medium-high heat.
  2. Lightly oil the grill grates.
  3. Place your marinated chicken thighs directly on the hot grill. Grill for about 4-6 minutes on one side, then flip and grill the other side for an additional 4-6 minutes.
Serving
  1. Let the grilled chicken rest for a few minutes after cooking to lock in the juices.

Notes

The longer the chicken marinates, the more flavorful it will be. Ideal marination is overnight. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (75°C).
