Ingredients

For the marinade
  • 2 Tablespoons olive oil Keeps everything moist and adds richness.
  • ½ Tablespoon Chili powder Adds a nice kick and depth of flavor.
  • 1 teaspoon Cumin Earthy and warm, enhances the overall taste.
  • ½ Tablespoon Smoked paprika Infuses a smoky undertone.
  • 1 teaspoon Oregano Balances the spices beautifully.
  • 1 Tablespoon fresh cilantro, finely chopped Bright and aromatic, lifts the dish.
  • 2 Tablespoons Lime juice Adds a tangy zest.
  • ½ teaspoon Brown sugar Gives a subtle sweetness.
  • Salt and black pepper Essential seasoning to enhance all other ingredients.
For the chicken
  • 1.5 lb boneless chicken breast Tender and juicy, the star of the dish.

Method

Preparation
  1. In a small bowl, combine the olive oil, smoked paprika, chili powder, cumin, oregano, chopped cilantro, brown sugar, salt, and black pepper. Stir until well combined to create a fragrant marinade.
  2. Cut the chicken breast into cutlets, transferring them to a freezer bag or a bowl.
  3. Pour the marinade over the chicken and seal the bag, massaging to ensure even coating. Marinate for at least 30 minutes, preferably overnight.
Cooking
  1. Heat a heavy-duty griddle pan on medium-high. Brush oil over the pan to prevent sticking.
  2. Add the marinated chicken breasts, cooking for 3-4 minutes without moving to develop a sear. Flip and cook for another 3-4 minutes, until cooked through.
Serving
  1. Remove the chicken from the pan and let it rest for 3-5 minutes before slicing or serving.

Notes

For extra flavor, try adding minced garlic to the marinade and use fresh lime juice instead of bottled. To enhance heat, add cayenne pepper to the marinade. Ensure not to overcrowd the pan while grilling for the best sear.
