Ingredients

Main Ingredients
  • 1 lb Pasta (recommended types: bowtie or orzo) These shapes are perfect for holding onto the sauce.
  • 1/2 cup Olive Oil A high-quality olive oil adds richness.
  • 2 pints Cherry Tomatoes (approximately 20-25 oz) These sweet tomatoes are enhanced when roasted.
  • 1 block Feta Cheese (8 oz) Creamy and tangy, ideal for baking.
  • 4 cloves Garlic (finely chopped) Add an aromatic element to the dish.
  • 2 pinches Red Pepper Flakes Adds a hint of heat.
  • 1 handful Fresh Basil Leaves Provides a fresh note.
  • Kosher Salt and Fresh Cracked Pepper For seasoning.
  • Balsamic Glaze (optional) Drizzle for added sweetness if needed.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the cherry tomatoes and olive oil. Season with kosher salt and pepper, then toss to coat.
  3. Make space in the center and place the block of feta cheese there. Drizzle with more olive oil and sprinkle red pepper flakes.
  4. Transfer the dish to the oven and bake for 30 minutes.
  5. After 30 minutes, increase the oven to 450°F (230°C) for an additional 5-10 minutes until golden and caramelized.
  6. Remove from the oven and stir in the chopped garlic and fresh basil.
  7. Meanwhile, cook the pasta al dente according to package directions, reserving about 1/4 cup of pasta water.
  8. Add the drained pasta to the roasted mixture, tossing to combine. Add reserved pasta water if the sauce is too dry.
  9. Adjust seasoning with kosher salt and freshly cracked pepper as desired.
  10. If needed, drizzle balsamic glaze for added sweetness.

Notes

For creaminess, consider a dollop of cream cheese or sour cream. Feel free to add vegetables like zucchini or bell peppers for variation. This recipe can also be made vegan with plant-based feta.
