  • pinch salt, pepper, and oregano Classic seasoning.
Toppings
  • 250 g Italian sausage meat Juicy and flavorful.
  • 250 g white button mushrooms Adds a tender texture.
  • 2 Tbsp olive oil For sautéing the mushrooms.
  • 1 pat butter Adds a silky finish to the sautéed mushrooms.
  • 1 clove garlic, whole, peeled and pressed Infuses the dish with garlic flavor.

  • pinch peperoncino Adds a hint of heat.
  • drop or two truffle oil (optional) Enhances the earthiness.
  • 250 g fresh bocconcini cheese Creamy cheese that rounds out the pizza.

Method

Preparation
  1. Sauté the Italian sausage meat in a pan, breaking it into small pieces, for about 10 minutes until browned and cooked through. Place it aside in a bowl.
  2. In the same pan, add olive oil and a pat of butter, then add the pressed garlic. Toss in the mushrooms and sauté for 5-8 minutes along with salt, pepper, and herbs until tender and fragrant.
  3. If desired, add truffle oil and sauté for an additional minute.
  4. Preheat your pizza oven or pizza stone to 500°F.
  5. Stretch the pizza dough into a round shape with slightly thicker edges for the crust, and place it on a floured pizza paddle.
  6. Spread pureed San Marzano tomato sauce across the dough, leaving a 1/4 inch border for the crust.
  7. Evenly distribute the sautéed sausage over the sauce, then layer with the sautéed mushrooms, and finish with pieces of fresh bocconcini cheese.
  8. Drizzle a little olive oil over the pizza and slide it into the preheated oven. Bake for about 5 minutes until the crust is golden and the cheese is bubbling.
  9. Remove the pizza from the oven, slice, and serve.

Notes

For optimal dough texture, allow it to rest for at least 30 minutes before stretching. You can substitute bocconcini with mozzarella if needed.
