Method
Preparation
- Line a rimmed baking sheet with parchment paper or aluminum foil.
- Place the salmon filets on top, skin-side down if applicable.
- Lightly brush the tops with olive oil and lemon juice, then sprinkle with kosher salt and black pepper.
Cooking the Salmon
- Place the baking sheet in a cold oven, close the door, turn the oven to 400 degrees F, and bake for 20 minutes.
- Check the salmon for doneness; it should flake easily with a fork and have an internal temperature of 145 degrees F.
- For a crispy top, broil for the last 1-2 minutes.
Cooking the Pasta
- In a large pot, bring well-salted water to a boil.
- Add the dried pasta and cook according to package directions until al dente, reserving some pasta water before draining.
Combining Ingredients
- Return the drained pasta to the pot and add pesto, grated Parmesan cheese, and a pinch of black pepper.
- Stir well to combine, adding reserved pasta water as needed for consistency.
- Break up the cooked salmon and mix into the pasta or top on plates.
Serving
- Serve immediately for the best flavor and texture.
Notes
Use fresh homemade pesto for a better taste. Monitor the salmon's internal temperature to prevent overcooking. Choose your favorite type of pasta.
