Preparation
- Bring the sirloin steaks to room temperature by allowing them to sit for about 30 minutes if the air is warm, or up to one hour in cooler temperatures.
- Season each steak generously with salt and freshly cracked pepper right before cooking.
Cooking
- In a heavy-based fry pan, heat 1 tablespoon of vegetable oil over high heat until it begins to smoke.
- Add the seasoned steaks to the hot pan, cooking each side for approximately 2 minutes for medium-rare doneness.
- Once cooked, transfer the steaks to a plate and cover loosely with aluminum foil. Let them rest for 5 to 10 minutes.
- Return the fry pan to medium-high heat, adding the remaining tablespoon of oil, then toss in the sliced bell pepper and cook until charred.
Serving
- Plate the rested steaks, topping them with the sautéed bell pepper and a generous dollop of pesto, with flatbreads on the side.
Notes
Choose well-marbled steaks; use a meat thermometer for perfect doneness at 130°F (54°C) for medium-rare. Homemade pesto greatly elevates this dish. Don't skip the resting period as it ensures juicy steak. Making flatbreads can be a fun activity to include in the meal prep.
