Preparation
- Coat the inside of the slow cooker with nonstick spray.
- Add the chopped onion to the bottom of the crockpot.
- Place the chicken thighs on top of the onions in a single layer.
- In a small bowl, combine the cream of chicken soup, paprika, salt, and pepper. Blend until smooth and pour it over the chicken and onions.
Cooking
- Cover the slow cooker and set it to low, cooking for 5 to 7 hours until chicken is cooked through and onions are tender.
- Remove the chicken from the pot, keeping it warm under foil.
- In another bowl, mix sour cream with 1 cup of the crockpot juices until blended, then stir this back into the crockpot.
- To thicken the sauce, add the cornstarch mixture or xanthan gum and olive oil, stirring thoroughly.
- Cook uncovered on low for an additional 10-15 minutes until sauce reaches desired thickness.
Serving
- Serve hot, garnished with fresh parsley or green onions.
Notes
For additional flavor, consider adding garlic or a bay leaf. This dish pairs well with rice, mashed potatoes, or salad. Adjust cooking times if doubling the recipe.
