- Add 1 tablespoon of rock salt and stir until dissolved.
Cooking
- Add linguine pasta to the boiling water and cook for 2 minutes less than the package instructions.
- Zest one lemon onto a plate for added flavor.
- Cut the lemons in half and squeeze the juice into a bowl, collecting as much juice as possible.
- In a large sauté pan, heat 4 tablespoons of extra virgin olive oil over medium-high heat.
- Add lemon zest and half of the lemon juice to the pan.
- Add mint leaves and the juiced lemon halves to the pan.
- Strain the pasta and transfer it directly to the pan with the lemon mixture.
- Reserve some pasta water in a mug and pour it into the pan, turning the heat to high.
- Stir constantly while the pasta water evaporates for one minute.
- Remove the lemon halves and continue cooking the pasta for an additional 1.5 minutes.
- Zest the remaining lemon into the pan and add more mint leaves.
- Incorporate the rest of the reserved lemon juice, stirring until all water has evaporated.
- Remove from heat and add Pecorino Romano cheese, tossing to coat the pasta.
Notes
Use the freshest ingredients for the best flavor. Adjust lemon intensity to your taste. Consider adding grilled chicken or shrimp for a heartier dish.
