  • 350 g Roasted Red Pepper Sweet, smoky peppers add depth and sweetness to the sauce.
  • 400 g Can Chopped Tomatoes Juicy, succulent tomatoes create the perfect base, enriching the sauce.
  • 3 tablespoons Olive Oil Smooth, fragrant oil that enhances the overall flavor and texture.
  • 3 cloves Garlic Freshly minced garlic elevates the taste.
  • 1 pinch Chilli Adds warmth and a hint of spice.
For the Pasta
  • 400 g Spaghetti Tender and comforting pasta that absorbs all the flavors.
For Serving
  • 120 g Parmesan Cheese Creamy cheese that melts beautifully into the sauce.
  • Salt To enhance flavor.
  • Black Pepper For an aromatic, peppery finish.

Method

Preparation
  1. Blend the Sauce: Drain the roasted red peppers, then add them along with the chopped tomatoes into a blender. Blend until the mixture is almost smooth.
  2. Cook the Garlic: In a large frying pan over medium-low heat, add the olive oil. Finely chop or crush the garlic cloves and add them to the pan. Cook gently for about 2 minutes until fragrant.
  3. Add Chilli and Sauce: Stir in the pinch of chilli and cook for another 30 seconds. Pour in the blended pepper and tomato mix, adding a pinch of salt. Bring to a gentle simmer and let cook for about 15 minutes, stirring occasionally.
  4. Cook the Spaghetti: While the sauce simmers, cook the spaghetti in a pot of well-salted boiling water until al dente according to package instructions. Drain and set aside.
  5. Combine and Serve: Transfer the cooked spaghetti into the pan with the sauce. Mix well, then turn off the heat and add one-third of the grated Parmesan, mixing gently until it melts into the sauce. If needed, loosen with a splash of pasta water.
  6. Plate and Garnish: Adjust salt as needed. Plate the spaghetti into warm bowls, top with remaining Parmesan and freshly cracked black pepper.

Notes

Adjust the amount of garlic and chilli based on your spice preference. For a chunkier sauce, pulse the ingredients in the blender. Substitute Parmesan with Pecorino Romano for a sharper flavor if desired. Leftovers can be stored for up to 3 days in the fridge, or the sauce can be frozen for up to 2 months.
