Preparation
- Preheat your oven to 400°F (200°C).
- Prepare your Sugo al Pomodoro if not using store bought. Simmer until rich and flavorful, then set aside.
- Cook fresh spinach until wilted, remove excess liquid, cool, and chop into small pieces.
- In a mixing bowl, combine ricotta, egg, parmigiano, and nutmeg. Mix well, then stir in the cooled spinach.
- If using traditional pasta, boil salted water and cook noodles until slightly underdone. Set cooked noodles in cold water.
Assembly
- Grease a 9×13-inch baking dish with olive oil. Spread a layer of tomato sauce on the bottom.
- Layer pasta over the sauce, followed by more sauce, one-third of the spinach-ricotta mixture, and a third of the mozzarella. Season with salt and pepper.
- Repeat layering two more times. On the final layer, top generously with extra cheese.
- Lasagna can be refrigerated for a day or frozen for later.
Baking
- Bake for about 35 minutes until bubbling and cheese is lightly browned.
- Let it rest for a few minutes before serving.
Notes
For a creamier ricotta texture, blend ricotta with a bit of cream. Add vegetables like mushrooms or bell peppers for more flavor. Use different cheeses for variation.
