  • 1 tablespoon extra virgin olive oil Adds depth to flavor.
  • 1 tablespoon honey or sugar Nourishes the yeast.
  • 1 envelope (2 ¼ teaspoons) rapid-rise or instant yeast Makes the dough rise.
  • 2 ¾ cups white whole wheat flour or regular whole wheat flour Provides a nutty flavor.

  • 1 teaspoon fine salt Enhances flavors.
Topping Ingredients
  • 1 cup pizza sauce or 1 32-ounce can of whole tomatoes, drained and crushed by hand Adds a juicy, tangy layer.
  • 2 to 3 cups shredded low-moisture part-skim mozzarella cheese Classic choice for pizza.
  • to taste Additional toppings Customize with vegetables, meats, or other cheeses.

Method

Preparation
  1. Preheat your oven to 500 degrees Fahrenheit, placing a rack in the upper third.
  2. In a liquid measuring cup or small bowl, whisk together water, oil, honey, and yeast. Allow this mixture to proof for about 5 minutes.
  3. In a food processor, pulse together the flour, Parmesan, and salt. While the processor runs, slowly pour in the water mixture, processing until a shaggy ball of dough forms.
  4. Dump the dough onto a floured work surface and knead it until it comes together fully. Divide the dough in half.
Rolling and Assembling
  1. On a floured surface, roll out each half into rounds about 11 inches in diameter.
  2. Transfer one round onto a parchment-lined baking sheet. Brush the outer inch of the dough with olive oil.
  3. Add half the sauce or crushed tomatoes, keeping the center moist without excess moisture.
  4. Sprinkle half of the cheese over the sauce, followed by any additional toppings.
Baking
  1. Bake on the top rack until crust and cheese are lightly golden—around 10 minutes for a plain cheese pizza and 12 for one loaded with toppings.
  2. Repeat with the remaining dough for your second pizza, then slice and serve warm.

Notes

Keep ingredients at room temperature for better yeast activation. Experiment with herbs or spices for added flavor. If desiring a thicker crust, allow the dough to rise before rolling out.
