Preparation
- In a small saucepan, pour half of the tart cherry juice and sprinkle the gelatin over it to allow it to 'bloom.' Whisk the mixture lightly to combine and set it aside.
- Set the saucepan on medium heat and add the remaining cherry juice. Bring the mixture to a gentle simmer while stirring continuously to ensure all the gelatin is fully dissolved.
- Once fully combined, remove from heat and let it cool for a few minutes.
- Add honey to the mixture and stir well until completely incorporated.
- Pour the mixture into silicone molds or a shallow dish.
Setting
- Leave it at room temperature for about 30 minutes, then transfer to the refrigerator for 2 hours to set fully.
- After the time is up, invert the silicone molds to gently remove the gummies or cut into small cubes if using a shallow dish.
Storage
- Store your gummies in an air-tight container for up to 2 weeks, preferably in the refrigerator.
Notes
For enhanced flavors, consider adding vanilla extract or other fruit juices. Ensure gelatin is fully dissolved for best texture. Experiment with fun silicone mold shapes.
