Ingredients

Main Ingredients
  • 12 pieces Organic pitted dates Juicy and naturally sweet, serving as the base.
  • 1/2 cup Organic peanut butter Can substitute with any nut butter of your choice.
  • 1/4 cup Organic dry-roasted or raw peanuts Use any nut of your choice.
  • 1 cup Dairy-free dark chocolate Opt for high-quality brands like Evolved Chocolate.
  • 1 teaspoon Maldon salt Adds an explosive flavor contrast.

Method

Preparation
  1. Start by pitting your dates if they aren’t already pitted. Slice each date down the middle, being careful not to cut all the way through to create a pocket.
  2. Line a plate or small baking sheet with parchment paper. Open the sliced dates slightly to form a pocket and arrange them on the prepared parchment.
  3. Generously spoon the nut butter into each date, filling them about 75% of the way. Add a few peanuts on top of the nut butter, then gently pinch the date closed.
Freezing & Chocolate Coating
  1. Transfer the filled dates to the freezer for about 15 to 20 minutes to firm up.
  2. Melt the dairy-free dark chocolate in a microwave-safe bowl or on the stovetop, then let it cool slightly.
  3. Once the dates are firm, dip each date in the melted chocolate ensuring they are fully coated, or drizzle the chocolate over the dates.
  4. Sprinkle each date with a touch of Maldon salt to enhance the flavors.
  5. Place the dates back in the freezer for an additional 20 to 30 minutes, or until the chocolate has hardened.
Serving
  1. Enjoy the Date Snickers immediately or store in an airtight container in the freezer for later.

Notes

Experiment with different nut butters like almond or cashew for a unique twist. For different flavor profiles, try white chocolate or carob as alternatives. Make a double batch to keep in the freezer for a quick snack.
