Ingredients

Main Ingredients
  • 2.5 pounds Apples (mix of firm, sweet-tart) Use varieties like Pink Lady and Granny Smith for best flavor.
  • 1 Cup Water Alternatively, apple juice for a sweeter preserve.
  • 1/2 Cup Granulated Sugar Brown sugar can be used for caramel undertones.
  • 1 Tablespoon Apple Cider Vinegar Adds tartness that balances sweetness.
  • 1 whole Lemon Zest and juice needed.
  • 1 Teaspoon Ground Cinnamon Optional, adjust to taste.
  • 1/2 Teaspoon Fine Sea Salt Enhances overall flavor.

Method

Preparation
  1. Wash, peel, and finely dice the apples. For chunkier preserves, cut larger pieces.
Cooking
  1. In a heavy-bottomed saucepan, combine diced apples, water, sugar, apple cider vinegar, lemon zest, lemon juice, spices, and salt. Stir well.
  2. Place saucepan over medium-low heat, bring to a gentle simmer. Stir occasionally for 20-25 minutes until apples are soft and glossy.
  3. Sterilize mason jars and lids in boiling water for about 10 minutes.
  4. Spoon the hot apple mixture into sterilized jars, leaving about half an inch of headroom. Secure the lids tightly.
  5. Process jars in boiling water for 15-25 minutes, depending on jar size and altitude, until lids snap shut upon cooling.
  6. Remove jars using tongs and let them cool on a clean kitchen towel for 8-12 hours.

Notes

Flavor variations: Add nutmeg or ginger for a twist. Mix different apple varieties for a complex flavor. If lid doesn't seal, reprocess or refrigerate the jar.
