  • 1 teaspoon salt For seasoning.
  • 1 teaspoon freshly ground black pepper For balance.

Method

Preparation
  1. Preheat your oven to 200°C (400°F or Gas 6).
  2. Remove any unwanted fat and excess skin from chicken thighs.
  3. In a large Ziploc bag, combine chicken thighs with smoked paprika, onion granules, garlic granules, olive oil, salt, and black pepper. Seal and shake to coat.
  4. Marinate chicken for at least 30 minutes, or overnight for best flavor.
Cooking
  1. Line a baking dish with parchment paper or place a wire rack on a rimmed baking sheet.
  2. Arrange chicken on the rack, skin side up, and bake for 25-30 minutes until about 80% cooked.
  3. Mix BBQ sauce and hot sauce in a bowl.
  4. After 25-30 minutes, brush BBQ sauce mixture on both sides of chicken.
  5. Return to oven and bake for an additional 10-15 minutes until chicken is cooked through.
Final Steps
  1. Once cooked, let chicken rest for a few minutes before serving.
  2. For extra caramelization, broil chicken for about 5 minutes.

Notes

For the best results, consider marinating overnight. Mix apple cider vinegar into BBQ sauce for a lighter flavor. Adjust hot sauce to your preferred spice level.
