Method

Preparation
  1. Preheat your oven to 400°F (200°C) and position the oven rack in the center.
  2. If using large chicken breasts, slice them in half lengthwise to create 4 cutlets.
  3. Prepare three small flat bowls: one for flour, one for beaten eggs, and one for mixing panko breadcrumbs with seasonings.
Dredging Process
  1. Dip each chicken cutlet into the flour, coating both sides evenly.
  2. Next, dredge the floured cutlet in the beaten eggs.
  3. Finally, dip the chicken into the breadcrumb mixture, ensuring both sides are well-coated.
Baking
  1. Place all coated chicken cutlets on a baking sheet lined with parchment paper.
  2. Drizzle or spritz a little olive oil over the top of each piece.
  3. Bake for about 8 minutes, flip each piece, and continue cooking for another 7 minutes, or until the internal temperature reaches 160°F (71°C).
  4. Let the chicken rest for 5 minutes before serving.

Notes

Use fresh panko for the best texture. Consider adding dried herbs to the breadcrumb mixture or mixing grated Parmesan into the panko blend for added flavor.
