Preparation
- Preheat your oven to 400°F (200°C) and position the oven rack in the center.
- If using large chicken breasts, slice them in half lengthwise to create 4 cutlets.
- Prepare three small flat bowls: one for flour, one for beaten eggs, and one for mixing panko breadcrumbs with seasonings.
Dredging Process
- Dip each chicken cutlet into the flour, coating both sides evenly.
- Next, dredge the floured cutlet in the beaten eggs.
- Finally, dip the chicken into the breadcrumb mixture, ensuring both sides are well-coated.
Baking
- Place all coated chicken cutlets on a baking sheet lined with parchment paper.
- Drizzle or spritz a little olive oil over the top of each piece.
- Bake for about 8 minutes, flip each piece, and continue cooking for another 7 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the chicken rest for 5 minutes before serving.
Notes
Use fresh panko for the best texture. Consider adding dried herbs to the breadcrumb mixture or mixing grated Parmesan into the panko blend for added flavor.
