Method

Preparation
  1. Preheat your oven to 425°F (220°C fan) and grab a small ovenproof dish or an oven tray.
  2. In the dish, add the cherry tomatoes, crushed garlic cloves, 1 tablespoon of thyme leaves, 1 teaspoon of flaky salt, 1 teaspoon of black pepper, and 4 tablespoons of olive oil. Mix thoroughly.
  3. Make a small hole in the center of the tomatoes and place the burrata cheese there. Drizzle another tablespoon of olive oil over the burrata.
  4. Transfer the dish to the preheated oven and roast for 25 minutes.
Cooking Pasta
  1. While the tomatoes and burrata are roasting, boil a large pot of well-salted water (about 2 tablespoons of salt) and cook the pasta according to package instructions until al dente, around 10 minutes.
  2. Scoop out 1/2 cup of pasta cooking water before draining the pasta.
Combining
  1. Once roasted, press down on the tomatoes, garlic, and burrata with a fork to create a creamy sauce.
  2. Add the drained pasta and a splash of reserved pasta water to the oven dish and toss until all pasta is coated.
Serving
  1. Transfer the pasta to serving bowls, topping with remaining thyme, basil, drizzling with olive oil, and finishing with black pepper and grated parmesan.
  2. Enjoy the dish while warm!

Notes

For a smoky flavor, add red pepper flakes before roasting. Substitute burrata with mozzarella or ricotta if unavailable. Experiment with different pasta shapes for best sauce adherence. Lemon zest can brighten up the flavors when serving.
