Method

Preparation
  1. Preheat the Oven: Begin by preheating your oven to 350°F (177°C). Spray a donut pan with non-stick spray and set it aside.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, nutmeg, and granulated sugar. Set aside.
  3. Combine the Wet Ingredients: In another bowl, whisk together the milk, Greek yogurt, and egg until smooth. Add the melted butter and vanilla extract, whisking until well combined.
  4. Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Add the Sprinkles: Fold in the rainbow sprinkles gently.
Baking
  1. Transfer Batter to the Pan: Use a large zipped-top bag to pipe the batter into the donut cups, filling them two-thirds to three-quarters full.
  2. Bake the Donuts: Place the donut pan in the oven and bake for 9-10 minutes. Allow cooling slightly before moving to a wire rack.
  3. Prepare the Glaze: In a medium saucepan over low heat, combine the milk, confectioners’ sugar, and vanilla extract. Whisk until smooth.
  4. Glaze the Donuts: Dunk each donut in the warm glaze and place on a wire rack over a baking sheet to catch drips.
Serving
  1. Enjoy: These donuts are best enjoyed the same day they are made. They can be stored at room temperature for up to two days.

Notes

Ensure all ingredients are at room temperature for best mixing. Don't skip the nutmeg for enhanced flavor. Experiment with different types of sprinkles for variations. For chocolate lovers, consider folding in mini chocolate chips. Allow the glaze to cool slightly before applying.
