Method

Preparation
  1. Heat a small pot over medium heat and add the cooked, shredded chicken along with the barbecue sauce. Stir well to coat the chicken evenly and heat through for about 5 minutes. Set aside.
  2. Lay one flour tortilla flat on a clean surface. Sprinkle 1/4 cup of shredded mozzarella evenly over half of the tortilla.
  3. Spread 1/4 of the barbecue chicken mixture over the cheese evenly.
  4. Add a sprinkle of the thinly sliced red onion and chopped cilantro, followed by another 1/4 cup of mozzarella.
  5. Carefully fold the tortilla in half to cover the fillings.
Cooking
  1. Preheat a large skillet over medium heat and place the folded quesadilla in the skillet. Cook until the tortilla is golden brown and crispy, about 3-4 minutes.
  2. Flip the quesadilla and cook the other side until golden brown and the cheese is melted, another 2-3 minutes.
  3. Remove the quesadilla from the skillet, let it rest for a minute, then slice into wedges.
  4. Serve hot with extra barbecue sauce for dipping.

Notes

For extra flavor, marinate the chicken in barbecue sauce for a few hours or overnight. Experiment with different cheeses for a unique twist. Serve with salsa or guacamole for added contrast.
