Preparation
- Remove the fat cap and any overly fatty areas from the brisket. Score the meat on both sides.
- Rub the beef base generously into the brisket. Combine remaining rub ingredients in a bowl and mix well.
- Coat the brisket thoroughly with the rub, cover it, and refrigerate overnight.
Cooking
- Prepare your smoker to a steady 225 degrees Fahrenheit.
- Mix apple wood and hickory for optimal flavor. Add wood chips once the grill reaches the desired temperature.
- Place the brisket on the smoker and smoke until the internal temperature reaches 170 degrees, approximately 6 hours.
- For the 'Texas Crutch', place the brisket in foil with apple juice or sweet tea to keep moist and seal tightly. Return it to the grill for another 2 hours, until 190 degrees.
- Remove from foil and brush with BBQ sauce, cooking for an additional 20 minutes.
- Tent the brisket in foil for about 30 minutes to allow juices to redistribute.
- Slice against the grain into 1/4-inch thick pieces and serve.
Notes
Use high-quality meat for the best results. Avoid opening the smoker frequently to maintain heat and smoke.
