Ingredients

For the Brisket
  • 4 lb Brisket “point” Use the highest quality beef you can find.
  • 1 part hickory (2 parts apple) Combination adds sweet and smoky flavor.
  • 2 tbsp beef base Concentrated flavor booster.
  • 2 tbsp garlic salt For aromatic flavor.
  • 2 tbsp fresh ground pepper Smoked black pepper is recommended.
  • 2 tbsp chile powder Adds warmth.
  • 1 tbsp light brown sugar Balancing sweetness.
  • 1 tbsp smoked paprika Infuses rich, colorful depth.
  • 2 tbsp chopped shallots Mild sweetness pairs well with beef.
  • 2 tbsp apple juice OR sweet tea Adds moisture and a hint of sweetness.
  • 3/4 cup BBQ sauce Choose your favorite for extra flavor.
  • 1 tbsp apple cider vinegar Offers tangy brightness.

Method

Preparation
  1. Remove the fat cap and any overly fatty areas from the brisket. Score the meat on both sides.
  2. Rub the beef base generously into the brisket. Combine remaining rub ingredients in a bowl and mix well.
  3. Coat the brisket thoroughly with the rub, cover it, and refrigerate overnight.
Cooking
  1. Prepare your smoker to a steady 225 degrees Fahrenheit.
  2. Mix apple wood and hickory for optimal flavor. Add wood chips once the grill reaches the desired temperature.
  3. Place the brisket on the smoker and smoke until the internal temperature reaches 170 degrees, approximately 6 hours.
  4. For the 'Texas Crutch', place the brisket in foil with apple juice or sweet tea to keep moist and seal tightly. Return it to the grill for another 2 hours, until 190 degrees.
  5. Remove from foil and brush with BBQ sauce, cooking for an additional 20 minutes.
  6. Tent the brisket in foil for about 30 minutes to allow juices to redistribute.
  7. Slice against the grain into 1/4-inch thick pieces and serve.

Notes

Use high-quality meat for the best results. Avoid opening the smoker frequently to maintain heat and smoke.
