Preparation
- Cut the aubergines into small cubes and sprinkle them with salt. Let them drain for 10 minutes to remove bitterness.
- Heat extra virgin olive oil in a pan and fry the eggplant cubes until golden brown. Drain on paper towels to remove excess oil and set aside.
- Thinly slice the yellow onions and sauté them in a skillet over medium heat until they are sweet and caramelized.
- Chop the celery into small cubes and boil them for 3-4 minutes until slightly tender. Drain and add to the skillet with the onions.
- Incorporate the capers and green olives into the sautéed mixture, stirring well to combine all ingredients.
- Mix in the tomato paste, red wine vinegar, cane sugar, and hot water. Stir frequently, simmering on low heat for about 20 minutes to allow the flavors to meld.
- Gently fold in the fried aubergines, allowing them to simmer for a few more minutes. Add chopped fresh basil to finish off the dish.
- Allow the Caponata to cool for about 30 minutes before serving.
Notes
For an authentic taste, let the Caponata rest overnight in the refrigerator. Experiment with different types of olives for varied flavors. Feel free to add pine nuts for added crunch.
