Preparation
- Preheat your oven to 350 degrees F and spray a 9×13” casserole dish with cooking spray.
- In a microwave-safe bowl, soften the cream cheese and butter by microwaving for 20-30 seconds and whisk until smooth.
- In a large mixing bowl, combine the cooked chicken, rice, cream cheese and butter mixture, cream of chicken soup, minced garlic, Italian dressing mix, chicken stock, half of the shredded cheese, and a sprinkle of salt and pepper. Mix until evenly combined.
- Transfer the mixture into the prepared casserole dish, spreading it evenly.
- Top generously with the remaining shredded cheese.
Baking
- Cover the dish with foil and bake for about 20-25 minutes, until the cheese is melted and the casserole is bubbling hot.
- Remove from the oven and let cool for 5 minutes before removing the foil.
- Garnish with fresh parsley before serving.
Notes
Use leftover chicken for convenience, and consider adding vegetables like peas or corn for extra nutrition. For a slow cooker version, combine all ingredients and cook on low for 4-5 hours.
